This was a recipe that we stumbled across in one of our French cookbooks. We wanted to use the blueberries we had in our fridge and this recipe worked out nicely. It is similar to a bread pudding, but less dense. We whipped this up for our family and it was a hit! Please see recipe below.

Ingredients
2 Tablespoons butter, softened
2/3 cup sugar
3 eggs
1/2 cup all purpose flour
1 cup light cream
1/2 teaspoon ground cinnamon
2 cups blueberries
confectioners’ sugar for dusting
Directions
- Pre-heat oven to 350 degrees Fahrenheit and grease a 1-quart baking dish.
- In a bowl, beat the butter and sugar together until creamy. Then add the eggs and beat ingredients together. Add in flour, gradually stir in cream, followed by cinnamon. Stir until smooth.
- Arrange the blueberries in the bottom of the greased baking dish. Pour the batter over the blueberries. Put the baking dish in oven and bake for at least 45 minutes to 1 hour when pastry is golden.
- Remove dish from oven and let cool for 15 minutes. Dust with confectioners’ sugar.
