After a day of gathering fresh produce from a farm in the Hudson Valley, we are creating a delicious farm-to-table dish using kale and apples. It’s a great feeling to know that the food on your plate was gathered by your own hands. Please see below for pics and the simple recipe.

3 cups kale, chopped
1/2 yellow onion, diced
2 medium sized Golden Delicious, peeled and diced
1 tablespoon olive oil
1/4 cup of water
- Pour a tablespoon of olive oil in a medium sized pot over a low to medium flame. Combine the onions and apples in the pot and sautee until the onions become translucent about 3 minutes. Then add the kale to the pot along with a 1/4 cup of water. Cover the pot and let ingredients steam for another 4 minutes.
- Remove salad from pot and serve.
