Recipe: Quinoa Tabbouleh with Dried Fruit & Feta

When we usually make a quinoa salad, we make it with beans, tomatoes, and a bunch of other ingredients. This time around we wanted to try something different. We discovered a recipe in the “We love Quinoa” cookbook and fell in love with it! Please see below to learn how to make this Quinoa Tabbouleh with Dried Fruit & Feta.

Quinoa Tabbouleh with Dried Fruit & Feta Cheese

Ingredients

¾ cup cooked quinoa

¼ of a large red onion, diced

2 small tomatoes, cored and diced

Handful of fresh parsley, finely chopped

Handful of fresh mint, finely mint

1/8 cup of dried apricots, chopped

¼ cup of dried cranberries

Zest and juice of 1 lemon

2 tablespoons of olive oil

1 tsp of allspice

½ cup of crumbled feta

Salt and pepper

 

Directions

Transfer cooked quinoa to a bowl

Add red onions, tomatoes, parsley, mint, apricot, and cranberries to the quinoa. Stir ingredients together.

Add lemon zest and allspice to the bowl.

Whisk the lemon juice and olive together adding salt and pepper. Then stir this mixture into the tabbouleh.

Top the tabbouleh with crumbled feta. Enjoy!
